Strawberry galette

1. 1Step 1. Make the crust as for the blueberry galette: cut the butter into the flour, sugar and salt until pea-sized, add ice water until it holds, press into a disk and chill 30 minutes.
2. 2Step 2. Heat the oven to 400 degrees. Line a sheet pan with parchment.
3. 3Step 3. Toss the strawberries with the sugar, cornstarch, vanilla, lemon juice and salt.
4. 4Step 4. Roll the dough into a rough 12-inch circle and move it to the pan. Arrange the strawberries cut side down in the center, leaving a 2-inch border.
5. 5Step 5. Fold the border up over the fruit in loose pleats. Brush with the egg wash and scatter with coarse sugar.
6. 6Step 6. Bake 35 to 40 minutes, until deep golden and bubbling. Cool at least 20 minutes before slicing.
